Goebbert's Home Grown Sweet Corn

We usually eat our sweet corn straight off the cob with no butter or salt, but we know that is not everyone’s taste. Here’s a few recipes to try straight from “A Taste of Goebbert’s: 2nd edition” that is available in store:
Corn and Basil Cakes
½ c. all-purpose flour
½ c. low-fat milk
2 lg. eggs
2 T. canola oil, divided
½ tsp. baking powder
½ tsp. salt
¼ tsp. freshly ground pepper
2 c. fresh corn kernel (about 2 large ears)
½ c. fresh basil, chopped
Whisk flour, milk, eggs, 1 T. oil, baking powder, salt and pepper in a medium bowl until smooth. Stir in corn and basil. Brush a large nonstick skillet lightly with some of the remaining 1 T. oil; heat over medium heat until hot (but not smoking). Cook 4 cakes at a time, using about ¼ c. batter for each, making them about 3 inches wide. Cook until edges are dry, about 2 minutes. Flip and cook until golden brown on the other side, 1 to 3 minutes more. Repeat with remaining batter and oil - making approximately 10 cakes total. Reduce the heat as necessary to prevent burning.
Grilled Sweet Corn
4 ears Goebbert's sweet corn, in their husks
Butter (or an herb butter) for serving
1) Prepare your grill with direct, high heat. To tell if your grill is hot enough, hold your hand one inch above - you should only be able to leave it there for 1 second.
2)Place the sweet corn (still in the husk) on the grill - this will protect the corn from burning or drying out. You can peel back a few of the outer layers if you want a little char on your corn. Cover the grill. Turn the corn occasionally, until the husks are completely blackened and charred on all sides, about 15 to 20 minutes.
3) Remove the corn from the grill - let them sit for 5 minutes or until cool enough to handle. Remove the silks and charred husks from the corn. Consider using a damp towel to protect your hands while husking the corn.
Serve with butter - or you can sprinkle with one of our delicious Corn on the Cob seasonings available in the market!
